Green tea has long been celebrated for its powerful antioxidant properties, but variations in how the leaves are grown, when in the season they are picked, and how they are treated after harvesting can have a dramatic impact on taste, quality and nutritional benefits. Matcha differs from other varieties of green tea in that the leaves of the Camellia sinensis plant are shaded with bamboo screens for the last month of growth, before being picked and left to dry naturally. This significantly increases the levels of chlorophyll, antioxidants and amino acids, far beyond those of any other green tea variety. The soft leaves are then painstakingly ground into a fine powder with a distinctive rich colour and fresh flavour.
For over 800 years, matcha has been highly revered in Japan for its superior quality, refinement and delicacy, and its many amazing health benefits. Traditionally, it was enjoyed only by Zen Buddhist monks, Japanese royalty and samurai officers, and as part of the prestigious tea ceremony. The samurai would drink matcha before battle, for long-lasting energy, and monks found the subtle balance of soothing and stimulating properties to be a great aid in meditation, health and wellbeing.
Matcha has been found to contain up to 137 times the antioxidants of popular green teas, even surpassing superfoods such as goji berries, blueberries and spinach! The particularly high levels of epigallocatechin gallate (EGCG) in matcha have been shown to promote cardiovascular health, healthy weight loss, and even to aid in cancer treatment. The low caffeine content, combined with the calming amino acid l-theanine, keeps you mentally alert and focused, without the nervous energy associated with coffee.

Suggested use: Use 1/2 - 1 tsp per cup. Pour freshly boiled water, cooled to 70-80C, over the powder and whisk till frothy. Or a dd 1/2 a teaspoon of this concentrated superfood to just about anything – smoothies, juices, desserts.
